Measure 2 oz. of a bourbon of your choice and 1 oz. of freshly-squeezed lemon juice. Pour it into your bar shaker.
Measure 1 oz. of sage-infused simple syrup and 1.5 oz. of pasteurized eggwhite. Pour into your bar shaker.
Give it all a good shake. Add a scoop of ice to your shaker. Then shake it again!
Put one, large ice cube into a rocks glass, then use the bar strainer to strain the drink over the cube.
Use the channel knife to cut a thin piece of the lemon peel. Add it delicately to the top of the glass. This will serve a dual purpose-- adding flavor and acting as a garnish.
Lightly sprinkle nutmeg on top of your drink. Like the lemon peel, this will add flavor and act as a garnish.
